Job Description

We are moving to Zanzibar in 2025! Attitude is opening its first high end Hotel Villa in Matemwe, which will be an adults-only hotel with 74 villas, two restaurants and two bars.  We are looking for an Executive Chef who cares about people, the community and sustainability! Of course, it is also about creating a customer experience that stands out!

MAIN DUTIES & RESPONSIBILITIES

1. Strategic Goals for an Executive Chef:

Be an example and ambassador of Attitude DNA all the time: Adapt Attitude’s core values and best practices to fit the Zanzibar local culture, ensuring alignment with the departmental purpose to achieve and maintain Family Member and Guest satisfaction all the time.

Integrate Business Strategies and Attitude Best Practices: Promote and maintain business strategies that focus on Attitude's three main pillars—People First, Local All The Way, and The Environment, incorporating these principles into best management practices for the F&B department, to drive sustainable long-term success.

Company Culture & Employee Engagement: Maintain and reinforce company culture in daily F&B operations, creating a positive, engaging experience for both employees and customers.

Transparent Communication: Foster open, transparent communication with all Family Members to build trust, improve engagement, and enhance teamwork.

Leadership & People Management: Promote a culture of proximity with employees, create and maintain a great place to work culture, ensuring employees are physically, emotionally and psychologically safe in their work environment.

Cost Efficiency: Ensure the execution of strategic business plan that defines operational goals, and profitability objectives.

Cross-Departmental Collaboration: Foster a culture of transversality by promoting cross-departmental collaboration and communication to achieve common goals.

2. Operational/Technical Responsibilities:

  • Coordinate daily operations with the Executive Sous Chef, including attending morning meetings to delegate tasks and ensure smooth service efficiency and guest satisfaction across all kitchen outlets.
  • Manage food orders by reviewing daily requisitions and coordinating with the breakfast team for next-day needs. Communicate special dinner orders to the main restaurant team.
  • Oversee kitchen operations, ensuring adherence to menu standards, food quality during dinner service, and maintaining cold storage freshness.
  • Plan and execute on-the-job training for kitchen supervisors to improve staff performance.
  • Assist in menu development, pricing strategies, and the creation of festive programs for guests.
  • Ensure health, safety, and equipment maintenance compliance, reporting accidents to HR and managing equipment conditions to prevent damage.
  • Implement controls to reduce food waste, theft, and ensure adherence to operational standards.
  • Reporting to the Executive Assistant Manager, timely submission of reports to Head Office (Mauritius), and ensuring transparency and accountability as and when required.

YOUR QUALITIES:

  • A Diploma in Hotel Management or Culinary Arts or at least School Certificate and NC3 Food Production.
  • Experience in a similar position or at least 5 years' experience as Executive Sous Chef.
  • Ability to embody and instill Attitude’s DNA and culture within the hotel.
  • Outstanding leadership and team-building skills.
  • Ability to compete in a fast-paced, dynamic environment.
  • Excellent communication and interpersonal skills.
  • Excellent people leadership skills.
  • Meticulous focus on detail and dedication to high standards.
  • Ability to work collaboratively with diverse teams.
  • Flexibility to adapt to changing priorities and environment.
  • Fluency in English and French.
